Cooking Class Menu for December 5th
On December 5th, Cupini's will be having another cooking class. The menu is set. In the tradition of the 'Feast of Seven Fishes' Cupini's will be preparing two seafood dishes.
Appetizer
Crostini Vari (Bruschetta, Fungi, Proscuitto)
Pasta
Fettuccine Luccullo (Shrimp, Cream sauce with Bell peppers and proscuitto)
Entree
Salmono in Camicia with proscuitto Spinach, Pine Nuts and Tomatoes
Dessert
Crostate Romano (Chocolate, Cream, Ricotta and Raspberry)

Recipes from Franco
Franco's been busy in the kitchen again, getting ready for the Holidays.
Coming up on December 5th we will be hosting a cooking class in the DiPardo room,
including a full meal and paired wines.
Give us a call at (816) 753 7662 to sign up. $45/person 6:15-8:30pm.
Here's a couple recipes for you to try at home:
Crostini Di Fegatini e Salsiccia
1/2 Chopped Onion
2 Cloves of Garlic- Chopped
1 Bay Leaf
1- Sausage-diced
6 oz Chicken Livers
1- Strip of Bacon
2 oz Olive Oil
4 oz White Wine
2 oz Romano cheese-grated
Salt and Pepper to taste
Toast Crostini Bread
In a skillet with olive oil saute onion, bacon, garlic and bay leaf. Add liver and sausage.
When cooking add white wine,salt and pepper.
Put mixture in a cusinart add romano cheese until a pasty texture. Smooth paste over crostini and top with parmigiano cheese.
Pappardelle Bolognese
1lb of Ground Beef
3 Strips of Bacon
1- Small Onion chopped
4-Garlic Cloves chopped
3 oz Olive Oil
4 oz Beef Stock
24 oz Tomato Sauce
6 oz Cream
crushed red pepper
salt and pepper to taste
Romano cheese
Make pasta like the ravioli recipe.
In a skillet saute ground beef with bay leaf and crushed red pepper. Cook until brown and put aside.
In another skillet add olive oil, saute onion, garlic, bacon until the onions are translucent.
Add tomato sauce, beef stock and red pepper. Add cooked ground beef and reduce to a medium heat for 10 minutes and the add the cream.
Toss the cooked ribbon of Pappardelle Pasta and top with Romano Cheese.

Practicing for the Record Noodle
Today, we tested to make sure that our rolls of pasta would merge into each-other in the pasta machine, and it worked out perfectly. Each Roll measure out to be about 103 feet long. Here's a picture of the rolls and what 103 feet of pasta sheets looks like after it's cut. Following is a video of how we merge our rolls in the pasta machine.

Fennel Salad
Ciao Bello,
We've put together a tasty and healthy salad recipe for you to try at home......
Fennel Salad
From the Latin feniculum or foeniculum, the diminutive of fenum or
faenum, meaning "hay".
Fennel- A medical miracle plant and defender of spirits
Hippocrates (remember the physician’s oath) noted fennel could be used
to help women increase their milk supply when feeding. In fact, a
physcian from the thirteenth century notes in the Book of Physicians
of Myddvai "he who sees fennel and gathers it not, is not a man but a
devil." Additionally, Pliny (AD 23-79), the Roman author of The
Naturalis Historie believed that serpants ate and rubbed against
fennel because it was able to improve their eyesight after shedding
their skins. His work identified 22 ailments that he treated with
fennel.
During medieval times, evil spirits were thought to roam freely as the
sun turned southwards. Fennel, when hung over doorways, was thought to
protect those within from the spirits. Should you insert Fennel seeds
into your keyhole the may aid in protecting your home from ghosts on
any night but particularly Midsummer's Eve.
Estimated Preparation Time: 15 minutes Serves Four
Extension:
Begin by ‘coring’ the fennel bulbs and then slicing ‘julienne' style.
Slice peppers ‘julienne’ style.
Mix all ingredients in bowl and toss.
Lay out feathers on plate and top with salad mixture
Ingredients:
Garlic - 5 cloves
Fennel Bulbs - 6
Yellow Peppers - 3
Red Peppers - 2
Red Wine Vinegar - 2oz
Olive Oil - 7oz
Salt and Pepper - to taste
Feathers - to taste

Try this at home...Baby Spring Salad with Strawberry-Raspberry Champagne dressing

We thought we would give you a taste of a few of the recipes we are working on, so you can try a few things out sooner.
Recently, we prepared a 'Baby Spring Salad with Strawberry-Raspberry Champagne Dressing'!
Here's the recipe, and a video of Franco creating the dish.
Baby Spring Salad with Strawberry-Raspberry Champagne Dressing
ingredients:
(for 1 serving)
1 Handful of Springmix
5 Raspberries
4 Slices of Cucumber
1 Tablespoon of Pecans
3 Strawberries cut in half
Optional, 1 grilled or baked chicken breast
ingredients for dressing:
2 oz champagne
6 Strawberries
1 Clove Garlic
1 Teaspoon Lemon Juice
4-5 oz olive oil
Pinch of black pepper
2 Tablespoons of sugar
